Optimización de tratamientos tecnológicos aplicados en el desarrollo de un alimento rico en ácidos grasos esenciales para murinos de laboratorio

La producción de animales de laboratorio trae aparejado el manejo de dietas para obtener el mejor
desempeño metabólico en investigación. Estas dietas deben cumplir cuatro requisitos: ajustarse a las
necesidades nutricionales de la especie y edad de los sujetos y ser agradables, permitir su conducta
característica de alimentación y estar libres de contaminantes. OBJETIVO: Seleccionar los tratamientos
tecnológicos más convenientes para el procesamiento y conservación de cada ingrediente y su mezcla final, en
el desarrollo de un alimento rico en ácidos grasos esenciales para ratones de laboratorio. METODOLOGÍA: Se
definió una dieta téorica para ratones adultos del Bioterio de la Facultad de Medicina (BBM) mediante tablas de
requerimientos nutricionales y composición de alimentos. Se formuló una dieta utilizando ingredientes naturales
como fuente de nutrientes específicos. Éstos fueron preparados según tratamiento adecuado al material:
esterilización por calor seco (80°C-120’)/microondas (100g-1’-1425 MHz)/irradiación UV (254 nm-15’) para
harina de pescado y alimento final, cocción (100°C-60’)/autoclavado (121°C-10’) para inactivación de
antinutrientes en caupí, molienda/humidificación para solubilización de compuestos bioactivos de semillas. Se
elaboró el alimento artesanalmente en forma de pellets, almacenándose hasta su uso. Se analizaron
composición centesimal, perfil lipídico y cantidad de antinutrientes. Se realizó el estudio experimental en
muestras de ratones Balb/c, contrastando la formulación con dos dietas comerciales para murinos utilizadas
habitualmente en el BBM, evaluándose aceptabilidad y desarrollo de los animales por consumo de dieta. Se
valoró el crecimiento de los ratones durante 6 semanas, por medición del peso cada siete días. Se pesaron los
alimentos ofrecidos al comienzo de la experiencia y una vez por semana para estimar aceptabilidad. Para
evaluación del perfil nutricional de los animales se realizaron extracciones de sangre y tejidos. RESULTADOS Y
DISCUSIÓN: Se concluye que el método tecnológico más adecuado para la preparación y esterilización de los
pellets es la irradiación UV con envasado al vacío, evitando reacciones de Maillard derivadas de tratamientos
con calor seco y microondas. En cuanto al valor nutricional se verificó que el aporte de los distintos nutrientes en
el alimento soportó adecuadamente la nutrición de los animales. The production of laboratory animals comes with the diet management, to obtain the best metabolic
performance in research. These diets must meet four requirements: adjust to the nutritional needs of the species,
the age of the subjects, and be pleasant, allow their normal eating behavior and be contaminant free.
OBJECTIVE: Select the most convenient technological treatments for the processing and conservation of each
ingredient and its final mixture, in the development of a food rich in essential fatty acids for laboratory mice.
METHODOLOGY: A theoretical diet was defined for adult mice of the Bioterium of the Faculty of Medicine
(BBM), through tables of nutritional requirements and food composition. A diet was formulated using natural
ingredients as a source of specific nutrients. These were prepared according to the appropriate treatment to the
material: dry heat sterilization (80 ° C-120 ') / microwave (100g-1'-1425 MHz) / UV irradiation (254 nm-15') for fish
meal and final feed, cooking (100 ° C-60 ') / autoclaving (121 ° C-10') for inactivation of antinutrients in cowpea,
milling / humidification for solubilization of bioactive seed compounds. The food was elaborated in the form of
pellets, stored until its use. Centesimal composition, lipid profile and amount of antinutrients were analyzed. The
experimental study was performed on samples of Balb / c mice, contrasting the formulation with two commercial
diets for murines habitually used in the BBM, evaluating acceptability and development of the animals by diet
consumption. The growth of the mice was assessed for 6 weeks, by measuring the weight every seven days.
The food offered was weighed at the beginning of the experience and once a week to estimate acceptability. For
the evaluation of the nutritional profile of the animals, blood and tissue extractions were performed. RESULTS
AND DISCUSSION: The most suitable technological method for preparation and sterilization of pellets is UV
irradiation with vacuum packaging, avoiding Maillard reactions derived from treatments with dry heat and
microwaves. Regarding the nutritional value, it was verified that the contribution of different nutrients in the food,
support adequately the animal nutrition.
